There is something so satisfying about a good souvlaki. This recipe is one of my favorites because it packs so much bright, zesty flavor into every bite of chicken without needing hours of complicated prep work.

I love serving this when I need a quick but impressive dinner. My best tip is to let the chicken sit in the marinade for at least an hour if you have the time because it really helps the lemon and oregano soak into the meat.

Ingredients

  • 1.5 pounds boneless skinless chicken breasts, cut into bite sized cubes
  • 1/4 cup olive oil
  • 3 tablespoons fresh lemon juice
  • 4 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped

Instructions

    Whisk together the olive oil, lemon juice, minced garlic, oregano, salt, and pepper in a large bowl.

    Add the chicken cubes to the bowl and toss until they are well coated in the marinade.

    Cover the bowl and let the chicken marinate in the refrigerator for at least 30 minutes, though longer is even better.

    Thread the chicken pieces onto skewers if you are grilling, or simply cook the cubes in a large skillet over medium high heat.

    Cook the chicken for about 6 to 8 minutes, turning occasionally, until the pieces are golden brown and cooked through.

    Remove from the heat and sprinkle with fresh parsley before serving.

Serve these skewers inside warm pita bread with a side of tzatziki sauce and fresh cucumber slices. If you have leftovers, keep them in an airtight container in the fridge for up to three days and use them to top a fresh garden salad.
