There is nothing quite like the smell of lemon, garlic, and oregano filling the kitchen while these chicken thighs roast in the oven. The skin gets perfectly crispy and golden brown, while the meat stays tender and juicy every single time.

My favorite way to serve these is with a big dollop of tzatziki and some warm pita bread. If you want to make it ahead of time, the marinade works wonders when it sits in the fridge for a few hours, so do not be afraid to plan ahead.

Ingredients

  • 6 bone in, skin on chicken thighs
  • 1/4 cup extra virgin olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 fresh lemon, juiced and zested
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon onion powder

Instructions

    Preheat your oven to 400 degrees Fahrenheit.

    In a small bowl, whisk together the olive oil, minced garlic, dried oregano, lemon juice, lemon zest, salt, pepper, and onion powder.
