There is nothing better than a dinner that cleans up as easily as it cooks. This recipe brings bright Greek flavors to your table without needing a mountain of pots and pans to get the job done.

Everyone loves how the lemony garlic juices from the chicken soak into the potatoes and peppers while everything roasts in the oven. My favorite trick is to add the feta cheese at the very end so it gets soft but stays slightly crumbly.

Ingredients

  • 1.5 pounds chicken thighs or breasts, cut into chunks
  • 1 pound baby potatoes, halved
  • 2 bell peppers, chopped into large pieces
  • 1 red onion, sliced into wedges
  • 3 cloves garlic, minced
  • 3 tablespoons olive oil
  • 1 tablespoon dried oregano
  • 1 lemon, juiced and zested
  • 1/2 cup Kalamata olives
  • 1/2 cup crumbled feta cheese
  • Salt and black pepper to taste

Instructions

    Preheat your oven to 400 degrees Fahrenheit.

    In a large bowl, toss the chicken, potatoes, peppers, and onion with the olive oil, minced garlic, dried oregano, lemon juice, lemon zest, salt, and pepper.

    Spread the mixture evenly onto a large rimmed sheet pan in a single layer.

    Roast in the oven for 30 to 35 minutes, or until the chicken is cooked through and the potatoes are tender.
