These Greek turkey bowls are a lifesaver on busy weeknights when you want something healthy but have very little time. They are packed with protein and full of bright, Mediterranean flavors that keep things interesting without requiring hours in the kitchen.

I love making these for meal prep because they hold up so well in the fridge throughout the week. If you want a little extra crunch, try adding some toasted pita bread or extra cucumbers on the side.

Ingredients

  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper to taste
  • 2 cups cooked rice or quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup kalamata olives, pitted
  • 1/2 cup crumbled feta cheese
  • 1/2 cup tzatziki sauce
  • Fresh parsley for garnish

Instructions

  1. 1

Heat the olive oil in a large skillet over medium high heat.

  2. 2

Add the ground turkey to the pan and break it up with a wooden spoon.

  3. 3

Stir in the oregano, garlic powder, onion powder, salt, and pepper.

  4. 4

Cook the turkey until it is browned and cooked through, which should take about 8 to 10 minutes.

  5. 5

Divide the cooked rice or quinoa into four bowls.

  6. 6

Top each bowl with a portion of the cooked turkey mixture.

  7. 7

Arrange the tomatoes, cucumber, olives, and feta cheese over the turkey.

  8. 8

Add a generous dollop of tzatziki sauce to each bowl and sprinkle with fresh parsley before serving.

๐Ÿ’ก Tips

Store the tzatziki sauce in a separate container if you plan to save leftovers for later in the week. This keeps the veggies crisp and the sauce fresh. You can also swap the rice for cauliflower rice if you prefer a lower carb option.
