If you are looking for a dinner that basically makes itself, this is the one for you. It is a favorite in my house because it is creamy, filling, and perfectly spicy without being too hot for the kids.

Since this recipe uses canned ingredients and pre cooked chicken, you do not need to do any chopping. It is a fantastic meal for those busy weeknights when you want something homemade but do not have the energy to spend hours in the kitchen.

Ingredients

  • 2 cups cooked shredded chicken
  • 1 jar 16 ounces green salsa
  • 1 can 15 ounces black beans, drained and rinsed
  • 1 can 15 ounces corn, drained
  • 4 cups chicken broth
  • 1 cup sour cream
  • 1 cup shredded Monterey Jack cheese
  • 1 teaspoon ground cumin
  • Fresh cilantro for garnish
  • Tortilla chips for serving

Instructions

    Place the shredded chicken, green salsa, black beans, corn, chicken broth, and cumin into your slow cooker.

    Stir everything well to combine the flavors.

    Cover the slow cooker and cook on low for 4 hours or on high for 2 hours.

    Right before you are ready to serve, stir in the sour cream and shredded cheese until the soup is smooth and creamy.

    Ladle into bowls and top with fresh cilantro and crushed tortilla chips.

๐Ÿ’ก Tips

Leftovers keep well in the fridge for up to three days in an airtight container. If the soup thickens too much while stored, just add a splash of chicken broth when reheating it on the stove.
