When the summer heat rolls in and you want to keep the kitchen cool, the grill becomes your best friend. This lemon herb chicken is a family favorite because it stays moist and packs a bright, fresh flavor that everyone loves.

My top tip for this recipe is to let the chicken marinate for at least thirty minutes. If you have extra time, leave it for two hours so the herbs really soak into the meat.

Ingredients

  • 4 boneless skinless chicken breasts
  • 1/3 cup olive oil
  • 1/4 cup fresh lemon juice
  • 3 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh parsley for garnish

Instructions

  1. 1

Whisk the olive oil, lemon juice, garlic, oregano, salt, and pepper together in a small bowl.

  2. 2

Place the chicken breasts in a large glass dish or a sealable plastic bag and pour the marinade over them.

  3. 3

Let the chicken marinate in the refrigerator for at least thirty minutes.

  4. 4

Preheat your grill to medium heat and lightly oil the grates.

  5. 5

Grill the chicken for about 6 to 8 minutes per side until it is cooked through and reaches an internal temperature of 165 degrees.

  6. 6

Remove from the grill and let the meat rest for five minutes before serving with a sprinkle of fresh parsley.

๐Ÿ’ก Tips

Store any leftover chicken in an airtight container in the fridge for up to three days. It tastes great cold sliced over a big green salad or tucked into a sandwich the next day.
