There is something truly special about the combination of bright lemon and earthy rosemary. This grilled chicken turns out tender and juicy every single time, making it a reliable favorite in my kitchen when I want something healthy but full of flavor.

It is so versatile that I often make a double batch. You can eat it straight off the grill, or chop it up to add into your favorite lunchtime salads, warm grain bowls, or hearty sandwiches.

Ingredients

  • 4 boneless skinless chicken breasts
  • 1/4 cup olive oil
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons fresh rosemary, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper

Instructions

  1. 1

In a medium bowl or a zip top bag, whisk together the olive oil, lemon juice, chopped rosemary, minced garlic, salt, and pepper.

  2. 2

Add the chicken breasts to the marinade, making sure each piece is well coated.

  3. 3

Place the chicken in the refrigerator and let it marinate for at least 30 minutes, or up to 4 hours for the best flavor.

  4. 4

Preheat your outdoor grill or indoor grill pan to medium high heat.

  5. 5

Remove the chicken from the marinade and place it on the hot grill.

  6. 6

Cook for about 6 to 8 minutes per side, or until the chicken is cooked through and reaches an internal temperature of 165 degrees Fahrenheit.

  7. 7

Remove the chicken from the heat and let it rest on a plate for 5 minutes before slicing and serving.

๐Ÿ’ก Tips

Store any leftovers in an airtight container in the fridge for up to three days. If you are serving this for dinner, it pairs beautifully with roasted potatoes or a fresh garden salad.
