There is something special about the combination of grilled sausage and charred vegetables. These kabobs are perfect for busy weeknights when you want a hearty meal that feels like a backyard barbecue treat without the fuss.

My biggest tip for success is to cut your vegetables into pieces that are roughly the same size as your sausage slices. This helps everything cook evenly on the grill so you get a perfect bite every single time.

Ingredients

  • 1 pound pre cooked sausage like kielbasa or smoked sausage, cut into 1 inch thick rounds
  • 2 bell peppers, cut into 1 inch squares
  • 1 large red onion, cut into 1 inch chunks
  • 1/2 cup your favorite barbecue sauce
  • 1 tablespoon olive oil
  • 8 wooden or metal skewers

Instructions

  1. 1

If you are using wooden skewers, soak them in water for at least 20 minutes before starting so they do not burn on the grill.

  2. 2

Preheat your outdoor grill to medium high heat or prepare an indoor grill pan over medium high heat.

  3. 3

Thread the sausage rounds, bell pepper pieces, and red onion chunks onto the skewers, alternating them until the skewers are full.

  4. 4

Brush the kabobs lightly with olive oil and place them onto the hot grill.

  5. 5

Cook the kabobs for about 8 to 10 minutes, turning them occasionally to ensure the vegetables soften and the sausage browns nicely.

  6. 6

Brush the barbecue sauce over the kabobs during the last 2 minutes of cooking to let it caramelize slightly.

  7. 7

Remove from the heat and serve immediately while warm.

๐Ÿ’ก Tips

Serve these with extra barbecue sauce on the side for dipping. If you have leftovers, keep them in an airtight container in the fridge for up to three days and reheat them in a pan for lunch.
