Hawaiian Haystacks are such a lifesaver on busy weeknights because everyone gets to customize their own plate. It is a classic comfort meal that feels special without needing hours in the kitchen.

My biggest tip is to set everything out in little bowls so the family can help themselves. It turns dinner into a fun activity, and it is a great way to get the kids to try different toppings.

Ingredients

  • 2 cups cooked white rice
  • 2 cups cooked chicken, shredded
  • 1 can cream of chicken soup
  • 1/2 cup milk
  • 1 cup pineapple tidbits, drained
  • 1 cup chow mein noodles
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped celery
  • 1/4 cup sliced green onions
  • 1/4 cup slivered almonds

Instructions

  1. 1

Whisk the cream of chicken soup and milk together in a medium saucepan over medium heat until smooth.

  2. 2

Add the shredded chicken to the sauce and stir until it is heated through.

  3. 3

Scoop a portion of warm rice onto each plate.

  4. 4

Ladle the creamy chicken mixture over the rice.

  5. 5

Top with your choice of pineapple, chow mein noodles, cheese, celery, green onions, and almonds.

๐Ÿ’ก Tips

Store the creamy chicken mixture and the rice in separate containers in the fridge for up to three days. Keep your toppings in individual bags or jars so they stay crisp until you are ready to eat again.
