Mornings can be hectic, and having a plan really helps me stay on track. I love these high protein options because they keep me full until lunch without any mid morning crashes.

Preparing your oats and eggs on a Sunday is the secret to a stress free week. You can grab your breakfast from the fridge and head out the door knowing you have a solid meal ready to go.

Ingredients

  • 1 cup rolled oats
  • 1 cup milk of your choice
  • 1/2 cup Greek yogurt
  • 1 tablespoon chia seeds
  • 6 large eggs
  • 1/2 cup chopped spinach
  • 1/4 cup shredded cheddar cheese
  • Salt and black pepper to taste

Instructions

  1. 1

For the oats, combine the rolled oats, milk, Greek yogurt, and chia seeds in a glass jar or container.

  2. 2

Stir the mixture well, cover it, and place it in the refrigerator overnight to set.

  3. 3

For the eggs, preheat your oven to 350 degrees Fahrenheit.

  4. 4

Grease a muffin tin and crack one egg into each hole, or whisk all six eggs in a bowl with spinach and cheese before pouring into the tin.

  5. 5

Bake for about 20 minutes or until the eggs are fully set.

  6. 6

Let the egg bites cool completely before storing them in an airtight container in the fridge for the week.

๐Ÿ’ก Tips

These breakfast items will stay fresh in the refrigerator for up to four days. You can reheat the egg bites in the microwave for 30 seconds if you prefer them warm, but the oats are best served cold straight from the jar.
