Chicken kofta is one of my favorite meals when I want something that feels special but is actually quite simple to make. The mix of warm spices like cumin and coriander gives the ground chicken a wonderful depth that everyone at the dinner table seems to love.

I recommend making sure you mix the meat and spices thoroughly with your hands to get the best texture. If you have time, letting the mixture chill in the fridge for about thirty minutes before shaping helps the skewers hold their form perfectly on the grill or in the pan.

Ingredients

  • 1 pound ground chicken
  • 1/2 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 pita breads
  • 1 cup plain Greek yogurt
  • 2 tablespoons fresh mint, chopped
  • 1 cucumber, sliced
  • 1 tomato, diced

Instructions

    In a large mixing bowl, combine the ground chicken, onion, garlic, parsley, cumin, coriander, paprika, salt, and pepper.

    Mix everything together well and shape the meat into oblong skewer shapes around bamboo sticks or just form them into patties.

    Heat a lightly oiled grill pan or skillet over medium heat.

    Cook the kofta for about 5 to 7 minutes on each side until they are nicely browned and cooked all the way through.

    While the chicken cooks, stir the fresh mint into the Greek yogurt to create a quick sauce.

    Serve the warm chicken kofta inside pita pockets with the fresh cucumber, tomato, and a generous dollop of the mint yogurt sauce.

You can store leftovers in an airtight container in the fridge for up to three days. If you want a lower carb meal, serve the chicken over a big bed of salad greens instead of using the pita bread.
