There is nothing quite like a good teriyaki chicken to satisfy those takeout cravings at home. This version uses a quick homemade sauce that coats the chicken beautifully, giving you that classic balance of salty and sweet flavors that everyone loves.

My favorite way to make this is in a hot skillet because it gets the sauce nice and sticky, but you can easily use your grill or oven depending on the weather. Serve it over fluffy rice with some steamed broccoli for a complete meal.

Ingredients

  • 1.5 pounds boneless skinless chicken thighs, cut into bite sized pieces
  • 1/2 cup soy sauce
  • 1/4 cup water
  • 1/4 cup brown sugar
  • 1 tablespoon rice vinegar
  • 1 tablespoon fresh ginger, minced
  • 2 cloves garlic, minced
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • 1 tablespoon vegetable oil
  • Sesame seeds and sliced green onions for garnish

Instructions

    In a medium bowl, whisk together the soy sauce, water, brown sugar, rice vinegar, ginger, and garlic until the sugar is fully dissolved.

    Place the chicken pieces into a large bowl or zip top bag and pour half of the sauce over them. Let it marinate for at least 20 minutes in the fridge.

    Heat the vegetable oil in a large skillet over medium high heat.

    Add the chicken to the skillet, discarding the used marinade, and cook until it is golden brown and cooked through.

    Pour the remaining fresh sauce into the skillet with the chicken.

    Stir in the cornstarch mixture and cook for another minute or two until the sauce bubbles and thickens into a glossy glaze.

Store any leftovers in an airtight container in the fridge for up to three days. You can serve this over white rice or quinoa, and it tastes great with a side of stir fried snap peas.
