There is something so comforting about a big bowl of warm, golden yellow rice. It is one of those classic sides that makes even a simple meal feel special because it brings so much color and flavor to the plate.

My favorite thing about this recipe is how the sweet corn adds a little pop of texture. If you want a bit more heat, feel free to toss in a pinch of red pepper flakes or serve it alongside your favorite grilled chicken.

Ingredients

  • 2 cups long grain white rice
  • 3 cups chicken broth
  • 1 tablespoon olive oil
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 teaspoon turmeric powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1 cup canned or frozen corn kernels

Instructions

    Rinse the rice under cold water until the water runs clear and then drain it well.

    Heat the olive oil in a large pot over medium heat.

    Add the diced onion and cook for about 3 minutes until it turns soft and translucent.

    Stir in the minced garlic and cook for another minute until fragrant.

    Add the rinsed rice to the pot and stir it for 2 minutes to toast the grains lightly.

    Stir in the turmeric, garlic powder, onion powder, and salt until the rice is evenly coated.

    Pour in the chicken broth and bring the mixture to a boil.

    Turn the heat down to low, cover the pot with a tight fitting lid, and let it simmer for 18 minutes.

    Remove the pot from the heat and stir in the corn.

    Keep the lid on and let the rice sit for 5 minutes before fluffing it with a fork to serve.
