This ice cream sandwich cake is one of my favorite go to desserts when I need something fast but impressive. It uses simple ingredients and requires zero actual baking, so it stays cool in the kitchen even on hot days.

People love this because it tastes like a professional ice cream cake without the high price tag. My best tip is to let the ice cream sit on the counter for about ten minutes before you start so it spreads smoothly over the sandwiches without breaking them apart.

Ingredients

  • 12 ice cream sandwiches
  • 1 quart cookies and cream ice cream
  • 8 ounces whipped topping
  • 1/2 cup chocolate syrup

Instructions

    Line a 9 by 13 inch baking dish with a sheet of parchment paper for easy removal.

    Arrange half of the ice cream sandwiches in the bottom of the dish in a single layer. You might need to cut some to make them fit perfectly.
