Easy Leftover Ham Fried Rice
A simple and comforting one pan meal that turns leftover ham into a delicious dinner.

It comes together so fast, especially if you use rice that you cooked earlier in the day. Cold rice fries up much better than fresh hot rice, so try to keep that in mind when you start cooking.
Ingredients
- 2 cups cooked white rice, chilled
- 1 cup diced cooked ham
- 1/2 cup frozen peas and carrots
- 2 large eggs, lightly beaten
- 2 tablespoons soy sauce
- 1 tablespoon vegetable oil
- 2 green onions, thinly sliced
- 1/2 teaspoon garlic powder
Instructions

Heat the vegetable oil in a large skillet or wok over medium high heat.

Add the diced ham to the pan and cook for about 2 minutes until it starts to brown slightly.

Stir in the frozen peas and carrots and cook until they are thawed and tender.

Push the ham and vegetable mixture to one side of the pan and pour the beaten eggs into the empty space.

Scramble the eggs until they are just set, then mix them into the ham and vegetables.

Add the chilled rice to the pan and break up any clumps with a spatula.

Pour the soy sauce over the rice and sprinkle in the garlic powder.

Stir everything together constantly for about 3 minutes until the rice is hot and well coated.

Remove from the heat and stir in the sliced green onions before serving.

This dish stays fresh in the fridge for up to three days in an airtight container. You can reheat it in the microwave or give it a quick toss in a hot pan with a tiny splash of water to keep the rice from drying out.
