There is nothing quite like yogurt marinated chicken for a quick and healthy weeknight dinner. The acidity in the yogurt helps tenderize the meat, which ensures that even chicken breast stays perfectly moist while it cooks.

My favorite thing about this recipe is how versatile it is. You can grill these chicken pieces, pan sear them, or even pop them in the oven. Just remember to let the chicken sit in the marinade for at least an hour to really let those bright lemon and herb flavors soak in.

Ingredients

  • 1.5 pounds boneless skinless chicken breasts or thighs
  • 1 cup plain Greek yogurt
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 3 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Instructions

  1. 1

In a large bowl, whisk together the Greek yogurt, olive oil, lemon juice, minced garlic, oregano, salt, and pepper.

  2. 2

Add the chicken to the bowl and toss until every piece is well coated in the marinade.

  3. 3

Cover the bowl and refrigerate for at least one hour or up to four hours for the best flavor.

  4. 4

Remove the chicken from the marinade and shake off any excess.

  5. 5

Cook the chicken on a preheated grill or in a hot skillet over medium heat for about 6 to 8 minutes per side until the center is cooked through and juices run clear.

๐Ÿ’ก Tips

Store any leftover chicken in an airtight container in the fridge for up to three days. This chicken is wonderful served alongside a fresh cucumber salad or tucked into warm pita bread with a little extra tzatziki sauce on the side.
