There is nothing quite like a meal that comes together quickly on a busy weeknight. This baked salmon is a favorite in my house because the foil traps all the moisture, keeping the fish tender while the asparagus roasts to perfection.

My top tip for this recipe is to make sure your asparagus spears are trimmed to similar sizes so they cook evenly alongside the fish. You can serve this right in the packets for a fun presentation that saves you from washing extra pans.

Ingredients

  • 2 salmon fillets
  • 1 bunch thin asparagus, woody ends trimmed
  • 3 tablespoons butter, melted
  • 3 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • 1 lemon, sliced into thin rounds

Instructions

    Preheat your oven to 400 degrees Fahrenheit.

    Cut two large pieces of aluminum foil, each about twelve inches long.

    Place half of the asparagus in the center of each piece of foil and season with a little salt and pepper.
