The lemon and vinegar marinade really makes the meat pop with brightness. While I love using Herbs de Provence for a classic taste, you can easily swap in whatever dried herb blend you have in your pantry to match your favorite side dishes.

Ingredients

  • 2 pounds boneless skinless chicken thighs
  • 1/3 cup olive oil
  • 1/4 cup fresh lemon juice
  • 2 tablespoons white vinegar
  • 3 cloves garlic, minced
  • 1 tablespoon Herbs de Provence
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

    Whisk together the olive oil, lemon juice, vinegar, minced garlic, herbs, salt, and pepper in a medium bowl.

    Place the chicken thighs in a large resealable bag or a shallow dish and pour the marinade over them.

    Seal the bag or cover the dish and let the chicken marinate in the refrigerator for at least 30 minutes, though up to 4 hours is better.
