This Lemon Parmesan Chicken is a favorite in my house because it tastes fancy but takes very little effort to put on the table on a busy weeknight. The combination of salty parmesan and fresh lemon juice creates a bright flavor that makes everyone ask for seconds.

My secret to the best results is to make sure your chicken breasts are pounded to an even thickness before you start. This helps them cook through perfectly without drying out while the beans soften in the pan.

Ingredients

  • 2 boneless skinless chicken breasts
  • 1/2 cup grated parmesan cheese
  • 1/3 cup panko breadcrumbs
  • 1 pound fresh green beans, trimmed
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 lemon, sliced into thin rounds
  • 2 cloves garlic, minced
  • Salt and black pepper to taste

Instructions

    Place the chicken between two sheets of plastic wrap and pound it to an even thickness using a meat mallet or a heavy pan.

    In a shallow bowl, mix the grated parmesan and panko breadcrumbs together. Press the chicken into the mixture to coat it well on both sides.
