There is nothing better than a fresh lemon marinade when you are firing up the grill. This recipe uses simple ingredients like lemon zest, garlic, and Dijon mustard to create a bold flavor that makes chicken taste fantastic with very little work.

I really recommend using chicken thighs because they stay nice and juicy while getting those perfect charred edges on the grill. It is a very forgiving cut of meat, so this is a great dinner choice for those nights when you want something delicious without any extra stress.

Ingredients

  • 2 pounds boneless skinless chicken thighs
  • 1/3 cup olive oil
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 2 tablespoons Dijon mustard
  • 1 tablespoon honey
  • 3 cloves garlic, minced
  • 1 tablespoon coarsely ground black pepper
  • 1 teaspoon salt

Instructions

  1. 1

Whisk the olive oil, lemon juice, lemon zest, Dijon mustard, honey, minced garlic, pepper, and salt together in a medium bowl.

  2. 2

Place the chicken thighs in a large resealable bag or glass dish and pour the marinade over them.

  3. 3

Seal or cover and let the chicken marinate in the refrigerator for at least 30 minutes, or up to 4 hours.

  4. 4

Preheat your grill to medium high heat and lightly oil the grates.

  5. 5

Remove the chicken from the marinade and place it on the grill.

  6. 6

Cook for about 5 to 7 minutes per side, or until the internal temperature reaches 165 degrees Fahrenheit and the chicken is nicely charred.

  7. 7

Remove the chicken from the heat and let it rest for 5 minutes before serving.

๐Ÿ’ก Tips

Serve this chicken alongside a big green salad, roasted potatoes, or grilled vegetables. If you have leftovers, keep them in an airtight container in the fridge for up to 3 days and use them in wraps or grain bowls.
