This dish is a favorite in my house because it comes together so quickly without sacrificing any flavor. The combination of spiced ground beef with sweet onions and carrots creates such a comforting base that everyone seems to love.

My top tip for this recipe is to not rush the browning of the meat. Letting the beef get a little crispy in the pan adds a wonderful texture that makes the whole bowl feel much more satisfying.

Ingredients

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 2 medium carrots, peeled and diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • Salt and black pepper to taste
  • 1 cup plain Greek yogurt
  • 2 tablespoons fresh mint, chopped
  • 1 tablespoon lemon juice
  • Cooked basmati rice for serving

    Heat the olive oil in a large skillet over medium high heat.

    Add the onion and carrots to the skillet and cook until they are soft and just starting to brown, which takes about 5 minutes.

    Add the ground beef to the pan and cook until it is browned all the way through, breaking it up with a wooden spoon as you go.

    Stir in the garlic, cumin, coriander, cinnamon, salt, and pepper. Cook for another 2 minutes until the spices are fragrant.

    While the beef cooks, whisk together the Greek yogurt, fresh mint, and lemon juice in a small bowl.
