There is something so special about biting into a warm muffin right out of the oven. These mini chocolate chip muffins are a staple in my kitchen because they are quick to whip up and always a hit with the kids when they come home from school.

My best tip for these is to avoid overmixing the batter once you add the flour. Just stir until the ingredients are barely combined so you keep that light and tender texture we all love.

Ingredients

  • 1 1/2 cups all purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1 large egg
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 cup mini chocolate chips

Instructions

  1. 1

Preheat your oven to 375 degrees Fahrenheit and grease a mini muffin tin or line it with mini paper liners.

  2. 2

In a large bowl, whisk together the flour, sugar, baking powder, and salt.

  3. 3

In a separate small bowl, mix the milk, egg, vegetable oil, and vanilla extract until well combined.

  4. 4

Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix.

  5. 5

Fold in the mini chocolate chips.

  6. 6

Spoon the batter into the prepared muffin tin, filling each cup about three quarters of the way full.

  7. 7

Bake for 10 to 12 minutes, or until a toothpick inserted into the center comes out clean.

  8. 8

Let the muffins cool in the pan for a few minutes before moving them to a wire rack.

๐Ÿ’ก Tips

These muffins stay fresh in an airtight container at room temperature for up to three days. You can also freeze them for up to one month and pop them in the microwave for a few seconds to warm them up before serving.
