There is something so comforting about meatloaf, but these mini versions are even better. Because they are baked in a muffin tin, they cook faster and stay incredibly moist. They are a great way to serve a classic dinner that feels a little bit special.

My favorite thing about this recipe is how easy it is to customize. You can swap the beef for turkey if you prefer something lighter, or add extra veggies like finely chopped peppers. Just make sure to let them rest for a few minutes before you try to pull them out of the pan.

Ingredients

  • 1 pound lean ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 1 large egg
  • 1/4 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup ketchup
  • 1 tablespoon brown sugar
  • 1 teaspoon yellow mustard

Instructions

  1. 1

Preheat your oven to 375 degrees Fahrenheit and grease a standard muffin tin with nonstick cooking spray.

  2. 2

In a large bowl, mix the ground beef, breadcrumbs, onion, egg, milk, salt, and pepper until everything is combined.

  3. 3

Divide the meat mixture evenly among the 12 muffin cups and press them down gently.

  4. 4

In a small bowl, whisk together the ketchup, brown sugar, and mustard to make the glaze.

  5. 5

Spoon a little bit of the glaze over each mini meatloaf.

  6. 6

Bake for 20 to 25 minutes until the meat is cooked through and the tops are slightly caramelized.

  7. 7

Let the meatloaves sit in the pan for about 5 minutes before serving so they hold their shape.

These keep well in the fridge for up to three days in an airtight container. You can also freeze them after baking if you want a quick meal for later. Serve them with a side of mashed potatoes or steamed green beans for a complete meal.
