After a busy holiday weekend, I always look forward to getting back to a simple dinner routine. This one pan chicken recipe is my go to for warm July evenings because it relies on fresh summer herbs and takes very little effort to put together.

My biggest tip is to make sure your chicken breasts are roughly the same size so they cook evenly in the pan. I like to serve this with a side of crusty bread to soak up all the delicious lemon juices left in the bottom of the skillet.

Ingredients

  • 2 large boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 fresh lemon, sliced into rounds
  • 1/2 cup chicken broth
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

    Season both sides of the chicken breasts with salt and pepper.

    Heat the olive oil and butter in a large skillet over medium heat.

    Add the chicken to the pan and cook for about 6 minutes on each side until golden brown and cooked through.

    Add the minced garlic and dried oregano to the pan and cook for one minute until fragrant.

    Pour in the chicken broth and add the lemon slices to the skillet.

    Simmer for another 3 minutes until the liquid reduces slightly.

    Sprinkle with fresh parsley before serving.

Store any leftovers in an airtight container in the fridge for up to three days. This chicken tastes great served cold over a fresh green salad for lunch the next day.
