My best tip is to cut your vegetables into even pieces so they cook at the same rate. If you have extra time, marinating the chicken for thirty minutes before roasting makes it even more flavorful.

Ingredients

  • 2 large chicken breasts, cut into bite size pieces
  • 1 pound baby potatoes, halved
  • 2 cups broccoli florets
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 fresh lemon, sliced into rounds
