This taco pasta has become a favorite in my house because it is so quick to put together after a long day. You get all that savory taco flavor mixed with tender pasta and plenty of melty cheese in one single pan.

My top tip for this recipe is to keep an eye on the pasta while it simmers. You want it just tender, so it holds up well to the sauce without getting mushy.

Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 2 cups beef broth
  • 1 cup tomato sauce
  • 1 cup canned sweet corn, drained
  • 8 ounces rotini or macaroni pasta
  • 1 1/2 cups shredded cheddar cheese
  • 1 tablespoon olive oil
  • Optional toppings like chopped cilantro, diced tomatoes, or sour cream
