There is nothing quite like a warm bowl of rice loaded with seasoned chicken, beans, and melted cheese. This recipe is a staple in my house because it comes together in just one pan, making cleanup a breeze.

My favorite part is that you can adjust the heat to your liking by choosing mild or spicy diced chiles. If you want a bit of extra crunch, try adding some fresh lettuce or crushed tortilla chips right before you serve it.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless skinless chicken breast, cut into bite sized pieces
  • 1 cup long grain white rice
  • 2 cups chicken broth
  • 1 can black beans, drained and rinsed
  • 1 cup frozen fire roasted corn
  • 1 can diced tomatoes with green chiles
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Optional toppings like sour cream, cilantro, and avocado

Instructions

    Heat the olive oil in a large skillet over medium high heat.

    Add the chicken pieces to the pan and season with salt and pepper, cooking until they are browned on all sides.

    Stir in the rice, chicken broth, black beans, corn, tomatoes with green chiles, chili powder, and cumin.

    Bring the mixture to a gentle boil, then turn the heat down to low and cover the pan with a tight fitting lid.

    Simmer for about 18 to 20 minutes, or until the rice is tender and the liquid is absorbed.
