There is something so satisfying about the sweet and savory combination of pineapple and chicken. This dish is a regular in my kitchen because it comes together quickly and always feels like a special treat after a long day.

My best tip is to get all your ingredients chopped and measured before you turn on the stove. Stir fry cooking happens very fast, so having everything ready to go makes the process much more relaxed.

Ingredients

  • 1 pound chicken breast, cut into bite sized pieces
  • 1 cup fresh or canned pineapple chunks
  • 1 red bell pepper, chopped
  • 1 small onion, chopped
  • 2 tablespoons soy sauce
  • 1/4 cup pineapple juice
  • 1 tablespoon brown sugar
  • 1 tablespoon rice vinegar
  • 1 teaspoon garlic, minced
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • 2 tablespoons vegetable oil

Instructions

    Whisk the soy sauce, pineapple juice, brown sugar, vinegar, and garlic in a small bowl to make your sauce.

    Heat one tablespoon of oil in a large skillet or wok over medium high heat.

    Add the chicken pieces and cook until they are browned and cooked through, then remove them from the pan.

    Add the remaining oil to the pan and toss in the bell pepper and onion. Cook for about three minutes until they are tender.

    Return the chicken to the pan and stir in the pineapple chunks.

This dish tastes best served hot over steamed white rice or brown rice. If you have leftovers, store them in an airtight container in the fridge for up to three days. You can reheat the chicken gently in a pan with a splash of water to loosen the sauce.
