This pork stir fry is a favorite in my house when we need a healthy dinner in a hurry. It combines tender bites of pork with crisp vegetables and a tangy sauce that tastes much better than takeout.

My top tip is to get all your ingredients chopped and ready before you turn on the stove. Because stir frying happens so fast, having everything measured out makes the process much more relaxed.

Ingredients

  • 1 pound pork tenderloin, cut into thin strips
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • 1 bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup fresh pineapple chunks
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon rice vinegar
  • 1 teaspoon minced garlic
  • 1 teaspoon grated ginger

Instructions

    Place the pork strips in a bowl and toss them with the cornstarch until they are lightly coated.

    Whisk together the soy sauce, brown sugar, rice vinegar, garlic, and ginger in a small bowl to make the sauce.

    Heat the oil in a large skillet or wok over medium high heat.

    Add the pork to the pan and cook until it is browned and cooked through, then remove it from the skillet and set it aside.

    Add the bell pepper and broccoli to the same pan and stir fry for 3 to 4 minutes until they are tender yet still crisp.

    Add the pineapple and the cooked pork back into the pan.

    Pour the sauce over the mixture and stir everything together for 1 minute until the sauce thickens and coats the pork and vegetables.

Serve this over a warm bed of jasmine rice or stir fry noodles. Store any leftovers in an airtight container in the fridge for up to two days and reheat them gently on the stovetop.
