There is nothing quite like a big platter of nachos to feed a hungry crowd. This recipe is my favorite go to when I have leftover pulled pork sitting in the fridge because it turns simple ingredients into a fun dinner that everyone loves.

You can keep these simple or pile them high with all your favorite toppings. My biggest tip is to spread your chips in a single layer on the baking sheet so every bite gets a bit of cheese and meat.

Ingredients

  • 10 ounces tortilla chips
  • 2 cups cooked pulled pork
  • 2 cups shredded cheddar cheese
  • 1 cup black beans, drained and rinsed
  • 1/2 cup diced red onion
  • 1 jalapeño, sliced
  • 1/2 cup sour cream
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup mild salsa

Instructions

    Preheat your oven to 400 degrees Fahrenheit.

    Spread the tortilla chips out in a single layer on a large rimmed baking sheet.

    Top the chips evenly with the pulled pork, black beans, red onion, and shredded cheddar cheese.

    Bake for about 10 minutes or until the cheese is completely melted and bubbly.

    Remove the pan from the oven and top with the fresh jalapeño slices, sour cream, salsa, and cilantro.

    Serve immediately while the cheese is warm and gooey.

💡 Tips

Store any leftovers in an airtight container in the fridge for a day, though they are best eaten right away. You can easily swap the cheddar for pepper jack if you like a little extra heat in your cheese.
