Easy Pulled Pork Nachos
These loaded nachos are the perfect way to use up leftover pulled pork for a quick and satisfying meal.
dailyrecipesbook.comThere is nothing quite like a big platter of nachos to feed a hungry crowd. This recipe is my favorite go to when I have leftover pulled pork sitting in the fridge because it turns simple ingredients into a fun dinner that everyone loves.
You can keep these simple or pile them high with all your favorite toppings. My biggest tip is to spread your chips in a single layer on the baking sheet so every bite gets a bit of cheese and meat.
Ingredients
- 10 ounces tortilla chips
- 2 cups cooked pulled pork
- 2 cups shredded cheddar cheese
- 1 cup black beans, drained and rinsed
- 1/2 cup diced red onion
- 1 jalapeño, sliced
- 1/2 cup sour cream
- 1/4 cup fresh cilantro, chopped
- 1/2 cup mild salsa
Instructions
- 1
Preheat your oven to 400 degrees Fahrenheit.
- 2
Spread the tortilla chips out in a single layer on a large rimmed baking sheet.
- 3
Top the chips evenly with the pulled pork, black beans, red onion, and shredded cheddar cheese.
- 4
Bake for about 10 minutes or until the cheese is completely melted and bubbly.
- 5
Remove the pan from the oven and top with the fresh jalapeño slices, sour cream, salsa, and cilantro.
- 6
Serve immediately while the cheese is warm and gooey.
💡 Tips
Store any leftovers in an airtight container in the fridge for a day, though they are best eaten right away. You can easily swap the cheddar for pepper jack if you like a little extra heat in your cheese.
