Ingredients

  • 2 salmon fillets, skin removed
  • 1 tablespoon taco seasoning
  • 1 tablespoon olive oil
  • 2 cups cooked rice
  • 1/2 cup sofrito sauce
  • 1 ripe avocado, sliced
  • 1/2 cup salsa
  • 2 tablespoons chopped green onions
  • 2 tablespoons fresh cilantro
  • Lime wedges for serving

Instructions

    Pat the salmon fillets dry with a paper towel and rub the taco seasoning evenly over all sides.
