Summer is my favorite time to cook because the fresh produce does all the heavy lifting. I love using juicy tomatoes and vibrant herbs to create meals that taste fancy but only take about thirty minutes to pull together on a busy weeknight.

This salmon recipe is one of my absolute go to meals for my family. The basil sauce is so aromatic and creamy that you might want to eat it by the spoonful. It pairs perfectly with a crisp tomato salad, making it a light yet satisfying dinner option.

Ingredients

  • 2 salmon fillets
  • 1 cup fresh basil leaves
  • 1/4 cup olive oil
  • 1 clove garlic
  • 1 tablespoon lemon juice
  • 2 cups cherry tomatoes, halved
  • 1 cucumber, diced
  • Salt and black pepper to taste
  • 1 tablespoon butter

Instructions

  1. 1

Prepare the basil sauce by blending the fresh basil, olive oil, garlic, and lemon juice in a small food processor until smooth.

  2. 2

Season the salmon fillets generously with salt and pepper.

  3. 3

Heat the butter in a skillet over medium heat and cook the salmon for about 4 minutes on each side until it is golden and cooked through.

  4. 4

While the fish cooks, toss the halved cherry tomatoes and diced cucumber in a bowl with a drizzle of olive oil, salt, and pepper.

  5. 5

Plate the salmon fillets and pour the vibrant basil sauce over the top.

  6. 6

Serve immediately with the fresh tomato and cucumber salad on the side.

๐Ÿ’ก Tips

Store any leftover basil sauce in an airtight jar in the fridge for up to two days. This dish tastes best when served alongside some crusty bread to soak up the extra sauce.
