This black pasta is one of my favorite ways to make a dinner feel special without spending hours in the kitchen. The dark color of the squid ink noodles looks so beautiful against the pink shrimp, and it has a subtle salty taste that reminds me of the ocean.

I love making this for a date night or when I want to impress my friends with something unique. The key is to keep the sauce simple so the seafood can really shine through, so make sure you use a good quality olive oil for the best flavor.

Ingredients

  • 12 ounces squid ink spaghetti
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 teaspoon red chili flakes
  • 1/2 pound large shrimp, peeled and deveined
  • 1/2 pound squid rings
  • 1/4 cup dry white wine
  • 2 tablespoons fresh parsley, chopped
  • 1 lemon, cut into wedges
  • Salt and black pepper to taste

Instructions

    Bring a large pot of salted water to a boil and cook the squid ink pasta according to the package directions until it is just al dente.

    While the pasta cooks, heat the olive oil in a large skillet over medium heat.

    Add the minced garlic and chili flakes to the skillet and cook for about one minute until the garlic smells fragrant but not brown.

    Turn the heat up slightly and add the shrimp and squid rings to the pan.

    Sautรฉ the seafood for about two to three minutes until the shrimp start to turn pink and the squid is opaque.

    Pour in the white wine and let it simmer for another minute to reduce slightly and create a light sauce.

    Reserve about half a cup of the pasta cooking water, then drain the noodles.

    Add the pasta to the skillet with the seafood and toss everything together, adding a splash of the pasta water if the dish looks too dry.

    Season with salt and pepper, stir in the fresh parsley, and serve immediately with lemon wedges on the side.

Store any leftovers in an airtight container in the fridge for up to two days. If you find the pasta a bit dry when you reheat it, just add a tiny splash of water or a drizzle of olive oil to bring back the texture.
