There is something so comforting about a big pot of black beans simmering on the stove. This recipe is a staple in my kitchen because it is simple to throw together and works perfectly as a side dish or a main component for tacos and burritos.

I love that you do not need to soak the beans beforehand. Just give them a quick rinse and let the spices work their magic while they cook until they are buttery soft.

Ingredients

  • 1 pound dried black beans, rinsed and picked over
  • 1 yellow onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 6 cups vegetable broth or water
  • 1 bay leaf
  • Salt and black pepper to taste
  • Fresh cilantro for garnish

Instructions

    Heat the olive oil in a large pot or Dutch oven over medium heat.

    Add the onion and cook for about five minutes until it is soft and translucent.

    Stir in the minced garlic, cumin, and chili powder and cook for one minute until fragrant.

    Add the rinsed black beans, broth, and the bay leaf to the pot.

    Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for about one and a half to two hours until the beans are tender.

    Remove the bay leaf, stir in salt and pepper to taste, and serve warm with a sprinkle of fresh cilantro.

You can store leftovers in an airtight container in the fridge for up to four days. These beans also freeze beautifully if you want to save some for a busy weeknight meal later on.
