This dinner is my favorite way to get a delicious meal on the table when I am short on time. Because you bake the gnocchi right on the sheet pan with the tomatoes, you avoid the hassle of boiling a big pot of water, and the gnocchi gets a lovely crisp texture.

Everyone loves this dish because it is so bright and colorful. My best tip is to use the best quality pesto you can find, as it really makes the fresh basil and mozzarella pop when you stir it all together at the end.

Ingredients

  • 1 package (16 ounces) shelf stable or refrigerated potato gnocchi
  • 2 cups cherry tomatoes
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 ounces fresh mozzarella pearls or torn mozzarella chunks
  • 1/4 cup prepared basil pesto
  • 1/2 cup fresh basil leaves, torn

Instructions

    Preheat your oven to 400 degrees Fahrenheit.

    Spread the uncooked gnocchi and the cherry tomatoes out on a large sheet pan in a single layer.

    Drizzle the olive oil over the gnocchi and tomatoes, then sprinkle with salt and pepper. Toss everything gently with your hands to make sure it is evenly coated.

    Bake for 20 minutes or until the tomatoes have burst and the gnocchi is lightly golden and crisp.

    Remove the pan from the oven and immediately add the fresh mozzarella. The heat from the pan will soften the cheese.

    Drizzle the pesto over the top and scatter the fresh basil leaves before serving.

Store any leftovers in an airtight container in the fridge for up to two days. Reheat gently in the oven or a skillet. This dish is best served warm so the mozzarella stays creamy.
