This sheet pan dinner is a real life saver on busy weeknights when you want a home cooked meal without the mess. It combines juicy chicken thighs, golden potatoes, and fresh green beans all in one go.

My favorite thing about this recipe is how the chicken juices flavor the potatoes while they roast. Just make sure to cut your potato chunks into even sizes so they all finish cooking at the same time.

Ingredients

  • 4 chicken thighs with skin and bone
  • 1 pound baby potatoes, halved
  • 1/2 pound fresh green beans, trimmed
  • 3 tablespoons olive oil
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh lemon juice

Instructions

    Preheat your oven to 400 degrees Fahrenheit.

    Place the chicken thighs and halved potatoes onto a large rimmed baking sheet.
