There is something special about coming home to the smell of slow cooked beef. These tacos are always a hit because the meat gets so incredibly tender that it practically melts in your mouth.

I love keeping this recipe simple by letting the slow cooker do the heavy lifting while I prep the toppings. If you have any extra time, I highly recommend warming your tortillas on a dry skillet for a minute before serving to get them nice and soft.

Ingredients

  • 2 pounds beef chuck roast
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 12 small corn or flour tortillas
  • 1 cup shredded lettuce
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • Fresh cilantro for garnish

Instructions

    Pat the beef dry with paper towels and cut it into large chunks.

    Heat the olive oil in a large pan over medium high heat and brown the beef on all sides, then place the meat into your slow cooker.

    Add the chopped onion and minced garlic to the same pan and cook for a few minutes until soft, then pour them over the beef.

    Whisk the beef broth, chili powder, cumin, oregano, salt, and pepper together in a small bowl and pour the mixture over the beef.

    Cover and cook on low for 8 hours or on high for 4 hours until the beef is very tender.

    Remove the beef to a plate and shred it using two forks, then stir a little bit of the cooking juices back into the meat to keep it moist.

    Serve the shredded beef in warmed tortillas topped with lettuce, cheese, sour cream, and cilantro.

You can store leftover meat in an airtight container in the fridge for up to three days. These tacos also taste great with a squeeze of fresh lime juice or a spoonful of your favorite mild salsa.
