I love making stir fries for busy weeknights because they are fast, fresh, and always satisfying. This recipe is a lighter take on the classic beef and broccoli, using succulent shrimp that cooks perfectly alongside bright, tender crisp broccoli florets.

The secret to getting the timing right is cooking the shrimp first and setting them aside while the broccoli steams. This way, the shrimp stay tender and the vegetables get just the right amount of crunch, all coated in a flavorful garlic and ginger sauce.

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 4 cups broccoli florets, cut into bite sized pieces
  • 2 tablespoons canola oil, divided
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 3 green onions, sliced and separated into white and green parts
  • 2 tablespoons water
  • 1/3 cup low sodium soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon toasted sesame oil
  • 1 tablespoon cornstarch
  • 1/4 teaspoon red pepper flakes, optional

Instructions

  1. 1

Whisk the soy sauce, honey, rice vinegar, sesame oil, and cornstarch together in a small bowl until smooth.

  2. 2

Heat one tablespoon of canola oil in a large skillet or wok over medium high heat. Add the shrimp in a single layer, season with a pinch of salt and pepper, and cook for about one to two minutes per side until pink and opaque. Remove the shrimp from the pan.

  3. 3

Add the remaining oil to the pan. Add the broccoli florets in an even layer and let them brown for two minutes. Pour in the water, cover the pan, and steam for two minutes until the broccoli is bright green and tender.

  4. 4

Stir in the garlic, ginger, and the white parts of the green onions. Cook for one minute, stirring constantly so the garlic does not burn.

  5. 5

Whisk your sauce one last time and pour it into the skillet. Add the cooked shrimp back into the pan. Toss everything together for one to two minutes until the sauce is glossy and coats everything well.

  6. 6

Scatter the green onion tops over the dish and serve immediately over warm rice.

๐Ÿ’ก Tips

Store any leftovers in an airtight container in the fridge for up to two days. To serve, warm it gently in a pan over medium heat with a tiny splash of water to loosen the sauce. This dish pairs perfectly with fluffy brown rice or quinoa.
