This pizza casserole is a total weeknight hero in my kitchen. It brings together all the classic flavors of a supreme pizza, like savory Italian sausage, crisp peppers, and plenty of melty cheese, with tender rotini pasta. I love that it all comes together in one skillet, which means dinner is delicious and cleanup is a breeze.

My favorite thing about this recipe is how flexible it is. You can use your favorite jarred sauce, or use up any leftover veggies you have in the fridge. If you want to keep things simple, just stick to cheese and pepperoni, or go wild with all your favorite pizza toppings for a meal that the whole family will ask for again and again.

Ingredients

  • 1 pound ground Italian sausage
  • 1 small yellow onion, diced
  • 1 green bell pepper, diced
  • 8 ounces mushrooms, sliced
  • 3 cloves garlic, minced
  • 8 ounces uncooked rotini pasta
  • 24 ounces pasta sauce
  • 1 cup water
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 1/2 cups shredded mozzarella cheese
  • 25 pepperoni slices
  • 1/4 cup sliced black olives

Instructions

  1. 1

Preheat your oven to 375 degrees Fahrenheit.

  2. 2

In a large oven safe skillet, brown the Italian sausage over medium heat until cooked through, breaking it into small crumbles with a wooden spoon.

  3. 3

Add the onion, bell pepper, mushrooms, and garlic to the skillet. Cook for about 4 to 5 minutes until the vegetables soften.

  4. 4

Stir in the uncooked rotini, pasta sauce, water, Italian seasoning, red pepper flakes, salt, and pepper. Ensure the pasta is well covered by the liquid.

  5. 5

Lower the heat, cover the skillet, and simmer for 10 to 12 minutes. Stir occasionally to prevent the pasta from sticking to the bottom until the noodles are al dente.

  6. 6

Top the casserole evenly with mozzarella cheese, pepperoni slices, and black olives.

  7. 7

Move the skillet to the oven and bake uncovered for 10 to 15 minutes until the cheese is bubbly and golden.

  8. 8

Let the dish sit for 5 minutes before serving so the sauce can settle.

๐Ÿ’ก Tips

Store any leftovers in an airtight container in the fridge for up to three days. When you are ready to eat again, just warm individual portions in the microwave or heat the whole skillet in the oven until the cheese is melted once more. If the pasta absorbs too much liquid while storing, add a tiny splash of water before reheating to keep it nice and saucy.
