Summer Zucchini and Feta Skillet

I love how the zucchini softens up while still keeping a little bit of bite. It is light enough for a busy weeknight but feels special enough to serve when you have guests over for a casual dinner.
Ingredients
- 2 large zucchinis, sliced into half moons
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1/2 cup crumbled feta cheese
- 1/4 cup fresh parsley, chopped
- Salt and black pepper to taste
- 1/4 teaspoon red pepper flakes (optional)
Instructions

Heat the olive oil in a large skillet over medium heat.

Add the sliced zucchini to the pan and cook for about 5 to 7 minutes until it begins to brown slightly.

Stir in the minced garlic and red pepper flakes, cooking for another minute until fragrant.

Remove the skillet from the heat.

Sprinkle the crumbled feta cheese and fresh parsley over the top.

Season with a little salt and pepper before serving warm.

This dish is best served immediately while the zucchini is warm and the cheese is slightly soft. If you have leftovers, keep them in an airtight container in the fridge for up to two days, though it is best enjoyed fresh. You can add a squeeze of lemon juice right before serving to brighten the flavors even more.
