There is something truly comforting about a one pan chicken dinner. The saltiness from the olives pairs perfectly with the tender chicken, making it a reliable favorite for busy weeknight evenings when you want something satisfying.

My biggest tip for this recipe is to use good quality olives, as they provide the main burst of flavor for the entire pan. If you have any leftovers, the chicken tastes even better the next day once the juices have had time to settle.

Ingredients

  • 4 chicken thighs with skin on
  • 1 cup pitted green olives
  • 3 cloves garlic, smashed
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 lemon, sliced into rounds
  • Salt and black pepper to taste

Instructions

  1. 1

Preheat your oven to 400 degrees Fahrenheit.

  2. 2

Pat the chicken thighs dry with a paper towel and season both sides generously with salt and pepper.

  3. 3

Place the chicken in a roasting pan or large skillet, skin side up.

  4. 4

Scatter the olives and smashed garlic cloves around the chicken pieces in the pan.

  5. 5

Tuck the lemon slices in between the chicken pieces.

  6. 6

Drizzle the olive oil over everything and sprinkle the dried oregano on top.

  7. 7

Roast in the oven for 35 to 40 minutes, or until the chicken skin is golden brown and the juices run clear.

  8. 8

Let the dish rest for five minutes before serving.

๐Ÿ’ก Tips

Serve this chicken over a bed of fluffy couscous or with a side of crusty bread to soak up the juices. You can store leftovers in an airtight container in the fridge for up to three days.
