This slow cooker ramen is a total life saver on busy weeknights when you want something warm and filling without hovering over the stove. You get all that savory, slurpy goodness of a classic ramen bowl with minimal effort, since the crockpot does the heavy lifting for you.

It is incredibly easy to customize with your favorite vegetables or a little extra heat if you like things spicy. It tastes much better than the instant packs, and your family will love how cozy and satisfying each bowl turns out.

Ingredients

  • 1 pound lean ground beef
  • 2 packages ramen noodles, discard all but 1 seasoning packet
  • 1 1/2 cups sliced bell peppers
  • 1 1/2 cups matchstick carrots
  • 3 cups low sodium beef broth
  • 1/2 cup hoisin sauce
  • 1/3 cup brown sugar
  • 1/4 cup low sodium soy sauce
  • 3 tablespoons cornstarch
  • 1 tablespoon rice vinegar
  • 1 tablespoon minced garlic
  • 1 teaspoon ground ginger
  • 1 to 2 teaspoons sriracha
  • Sesame seeds for garnish
  • Sliced green onions for garnish

Instructions

    Heat a large skillet over medium high heat. Add the ground beef and cook until browned, crumbling it as you go.

    Drain the excess grease from the beef, then add the meat into your slow cooker insert.

    Add the sliced bell peppers and matchstick carrots to the slow cooker with the beef.

    In a medium bowl, whisk together the beef broth, hoisin sauce, soy sauce, brown sugar, cornstarch, rice vinegar, garlic, ginger, sriracha, and the single ramen seasoning packet.

    Pour the sauce mixture over the beef and vegetables, then cover and cook on high for 1 to 2 hours or on low for 3 to 4 hours.

    About 10 minutes before you are ready to eat, stir the ramen noodles into the slow cooker. Cover and cook for another 5 to 10 minutes until the noodles are tender to your liking.

    Serve hot topped with a sprinkle of sesame seeds and fresh green onions.

If you have leftovers, store them in an airtight container in the fridge for up to 3 days. To keep the noodles from getting too soft, try storing the broth and noodles separately if you plan on eating this over several days. You can also soft boil an egg to place on top for a restaurant style finish.
