There is nothing quite like coming home to a house that smells like a delicious meal waiting for you. This salsa chicken is a true favorite in my kitchen because it takes almost no effort to put together but tastes like you spent hours at the stove. The chicken comes out so tender that it practically shreds itself with just a fork.

My best tip for this recipe is to use your favorite brand of salsa. Since it provides all the seasoning and moisture for the chicken, choose one with the level of heat and spice that your family enjoys most. It is perfect for tacos, burrito bowls, or even served over a simple bed of rice.

Ingredients

  • 2 pounds boneless skinless chicken breasts
  • 1 jar (16 ounces) chunky salsa
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste

Instructions

  1. 1

Place the chicken breasts in the bottom of your slow cooker.

  2. 2

In a small bowl, mix together the cumin, chili powder, garlic powder, salt, and pepper. Sprinkle this spice blend evenly over the chicken.

  3. 3

Pour the entire jar of salsa over the chicken, making sure it is well coated.

  4. 4

Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours.

  5. 5

Once the cooking time is up, use two forks to shred the chicken directly in the slow cooker, stirring it into the salsa juices.

  6. 6

Serve warm directly from the crockpot.

๐Ÿ’ก Tips

Store any leftovers in an airtight container in the fridge for up to three days. You can also freeze this cooked chicken for later use in soups or casseroles. Try topping your serving with fresh cilantro, avocado slices, or a dollop of sour cream.
