There is nothing better than coming home to a house that smells like a delicious taco night. This recipe is a staple in my kitchen because you can just toss everything into the slow cooker and let it do all the heavy lifting for you.

My best tip is to use two forks to shred the chicken directly in the pot. This lets the meat soak up all those tasty juices before you serve it up on your favorite tortillas.

Ingredients

  • 2 pounds boneless skinless chicken breasts
  • 1 packet taco seasoning
  • 1 cup chunky salsa
  • 1/2 cup chicken broth
  • 10 small flour or corn tortillas
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro

Instructions

    Place the chicken breasts at the bottom of your slow cooker.

    Sprinkle the taco seasoning evenly over the chicken.

    Pour the salsa and chicken broth over the top of the seasoned chicken.

    Cover and cook on low heat for 6 to 7 hours or on high heat for 3 to 4 hours until the chicken is tender.

    Remove the chicken from the pot and shred it into pieces using two forks.

    Return the shredded chicken to the pot and stir it well so it absorbs the juices.

    Spoon the chicken into warm tortillas and top with cheese, sour cream, and cilantro.

Store any leftover chicken in an airtight container in the fridge for up to three days. You can reheat the meat in a pan with a splash of broth to keep it moist. These tacos go great with a side of black beans or a simple lime rice.
