There is something so satisfying about a bowl full of savory ground turkey paired with fresh toppings. This dish is a favorite in my house because it comes together quickly and works perfectly for meal prep during a busy week.

You can easily adjust the amount of chili powder if you prefer a milder taste. I like to serve this with a side of warm naan or fluffy basmati rice to soak up all those delicious spices.

Ingredients

  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground turmeric
  • Salt and pepper to taste
  • 1 cup plain Greek yogurt
  • 1/2 cup cucumber, diced
  • 1 tablespoon fresh cilantro, chopped
  • 1 tablespoon lemon juice

Instructions

  1. 1

Heat the olive oil in a large skillet over medium heat.

  2. 2

Add the onion to the skillet and cook until it is soft and translucent.

  3. 3

Stir in the garlic and ginger, then cook for one minute until fragrant.

  4. 4

Add the ground turkey to the pan and break it apart with a spoon as it browns.

  5. 5

Mix in the curry powder, cumin, turmeric, salt, and pepper, cooking for another five minutes to let the flavors blend.

  6. 6

In a small bowl, whisk together the Greek yogurt, diced cucumber, cilantro, and lemon juice.

  7. 7

Serve the cooked turkey in bowls and top each portion with a generous dollop of the cucumber yogurt sauce.

๐Ÿ’ก Tips

Store the turkey and the yogurt sauce in separate containers in the fridge for up to three days. If you want a bit more crunch, add some toasted almonds or fresh chopped tomatoes on top before serving.
