These bowls are a favorite in my house because they come together quickly but taste like a special treat. Everyone loves the combination of charred corn and hearty ground beef, which makes it a satisfying meal for any night of the week.

My best tip is to get your pan nice and hot before adding the corn. You want to see a bit of color on the kernels to get that authentic smoky flavor that makes this dish so delicious.

Ingredients

  • 1 pound ground beef
  • 1 tablespoon taco seasoning
  • 2 cups sweet potatoes, peeled and diced
  • 2 cups corn kernels, fresh or frozen
  • 1 avocado, sliced
  • 1/2 cup crumbled cotija cheese
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons olive oil
  • 1 lime, cut into wedges
  • Salt and pepper to taste

    Preheat your oven to 400 degrees Fahrenheit.

    Toss the diced sweet potatoes with a drizzle of olive oil, salt, and pepper on a baking sheet.
