Everyone in my house gets excited when these taco cups are on the menu. They are perfectly portioned for little hands and make a great quick dinner when you want something satisfying but simple to put together.

My best tip is to get all your toppings ready before you start assembling the cups. It makes the process move much faster and ensures everyone gets their tacos exactly how they like them.

Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 24 wonton wrappers
  • 1 cup shredded cheddar cheese
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup sour cream
  • 1/4 cup chopped fresh cilantro
  • Optional: pickled jalapenos

Instructions

    Preheat your oven to 375 degrees Fahrenheit and lightly grease a standard muffin tin.

    Brown the ground beef in a large skillet over medium heat until it is cooked through. Drain any excess fat.

    Stir in the taco seasoning and the amount of water called for on the packet. Simmer for a few minutes until thickened.

    Press one wonton wrapper into each muffin cup. Bake these empty wrappers for about 5 minutes to lightly crisp them up.

    Remove the tray from the oven and spoon a portion of the beef mixture into each wrapper.

    Top each cup with a sprinkle of shredded cheddar cheese.

    Place the tray back in the oven for 5 to 7 minutes, or until the cheese is melted and the edges of the wrappers are golden brown.

    Top with shredded lettuce, diced tomatoes, a dollop of sour cream, and fresh cilantro before serving.

Store any leftover taco cups in an airtight container in the fridge for up to two days. Reheat them in the oven or a toaster oven to keep the wrappers crispy. You can also serve these with extra salsa or guacamole on the side for dipping.
