Three Cup Chicken is a classic dish that is perfect for a busy weeknight meal. It is incredibly simple to make, yet it offers such a rich, aromatic flavor that makes it feel like you spent hours in the kitchen.

People love this recipe because it uses simple pantry staples and comes together in just ten minutes. If you want to impress your family with a dish that sounds fancy but is actually very approachable, this is the one for you.

Ingredients

  • 1.5 pounds boneless chicken thighs, cut into bite sized pieces
  • 1 tablespoon vegetable oil
  • 6 slices fresh ginger
  • 1.5 tablespoons finely minced garlic
  • 1 to 2 whole dried chillies
  • 2 tablespoons Shaoxing cooking wine
  • 2 tablespoons light soy sauce
  • 1 tablespoon dark soy sauce
  • 1 tablespoon sugar
  • 1 tablespoon toasted sesame oil
  • 1 cup fresh Thai basil leaves

Instructions

  1. 1

In a small bowl, whisk together the Shaoxing wine, light soy sauce, dark soy sauce, and sugar until combined.

  2. 2

Heat the vegetable oil in a non stick pan over medium heat. Add the ginger slices and dried chillies, cooking for about 30 seconds to infuse the oil with flavor.

  3. 3

Increase the heat to high, add the chicken pieces to the pan, and sear for 2 to 3 minutes until the surface of the meat is browned.

  4. 4

Pour the sauce mixture over the chicken, bring it to a simmer, and cook for another 3 to 4 minutes until the chicken is cooked through and the sauce reduces into a thick, glossy syrup.

  5. 5

Turn off the heat and stir in the toasted sesame oil and fresh Thai basil leaves until the leaves are wilted and fragrant.

  6. 6

Serve immediately over a warm bowl of steamed rice.

๐Ÿ’ก Tips

Store any leftovers in an airtight container in the fridge for up to two days. When you are ready to eat again, just reheat it gently in a pan with a tiny splash of water to loosen the sauce. For serving, this dish is best enjoyed with a side of steamed jasmine rice to soak up all the extra sauce.
