Easy Vegetarian Meatballs

- 3/4 cup old fashioned oats
- 1/4 teaspoon fennel seeds
- 1/2 cup cashews
- 1 15 ounce can chickpeas, drained and patted dry
- 1 cup crumbled feta cheese
- 1 large egg
- 1 tablespoon olive oil, plus more for brushing
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon kosher salt
- 1 large handful fresh mint or Italian parsley

Preheat your oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper.

Place the garlic, oats, and fennel seeds into a food processor and pulse until they are finely ground.

Add the cashews, chickpeas, feta cheese, egg, olive oil, oregano, garlic powder, cumin, salt, and your chosen fresh herbs to the food processor.

Use a cookie scoop to form the mixture into about 20 small meatballs and place them on your prepared baking sheet.
