When life gets busy, I always turn to ground beef because it is so versatile and cooks up in a flash. This skillet meal is one of my favorite go to recipes because it is packed with protein and vegetables, making it a complete dinner that my whole family enjoys.

My best advice for this recipe is to make sure you brown the beef really well before adding the vegetables. That extra bit of color adds a wonderful depth of flavor to the entire dish, and it only takes a couple of extra minutes.

Ingredients

  • 1 pound lean ground beef
  • 1 tablespoon olive oil
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 2 cups fresh broccoli florets
  • 1 red bell pepper, chopped
  • 1 zucchini, sliced into half moons
  • 2 tablespoons soy sauce
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste

Instructions

    Heat the olive oil in a large skillet over medium high heat.

    Add the ground beef to the pan and cook until it is browned and no longer pink, breaking it apart with a wooden spoon as you go.

    Add the onion, garlic, broccoli, bell pepper, and zucchini to the skillet with the beef.

    Stir everything together and cook for about 5 to 7 minutes until the vegetables are tender but still crisp.

    Stir in the soy sauce and oregano, then season with salt and pepper to your preference.

    Serve the mixture warm, perhaps over a scoop of brown rice or cauliflower rice if you like.

You can store any leftovers in an airtight container in the fridge for up to three days. This dish is excellent for meal prep since the flavors actually taste even better the next day after they have had time to meld together.
